Hugues Dorison Interview
The consultancy project is one of the latest MBA modules. We needed an experienced professional who could combine firmness and diplomacy, rigour and open-mindedness to assist our students through this important part of their programme. We found this rare combination in Hugues Dorison. He is always smiling and never seems affected by his numerous responsibilities. The first impression reveals the many qualities of this multitalented lecturer: a charismatic gifted professional teacher.
Could you describe your career in the hospitality and tourism industry in a few words?
After a 2 year hospitality diploma I worked for 20 years in France and abroad in different managerial positions. I worked in a Michelin 2-star Relais & Châteaux where I began to appreciate work in food service and in the kitchen. I have wonderful memories from abroad, all very different depending on the destination. One example is as Cost Controller for Ramada Renaissance in England and another as Purchasing Manager for Club Med in Turkey. My last experience prior to becoming a consultant was as manager for various establishments such as Holiday Inn France. In 2005, as I already mentioned, I decided to create my own consulting firm 18/10 CONSEIL where we offer training, assistance and advice to companies in the industry.
Why did you choose to lecture at Ecole de Savignac?
All through my career, I have felt the need to transmit my experience (I even became a tennis instructor when I was 17!). Teaching is a constant challenge that makes you want to stay up to date and that reminds you each day that nothing should be taken for granted; I therefore draw a lot from my teaching experience at Ecole de Savignac. Through the network, three years ago, I met Florent Rey (a consultant who also lectures at Ecole de Savignac). Through him I then met Roger Haigh, Richard Ginioux and the rest of the team. A new experience was about to begin and the Bachelors - Year 1 had to put up with my initial “teething troubles”».
