To enable students to :

 Examine service operations and hospitality service delivery
 Develop an understanding of the day to day management of a hospitality enterprise
 Conduct an evaluation of the service delivery and management of a small hospitality enterprise

 Examine the elements that contribute to business performance
 Analyse service delivery and service quality systems
 Evaluate process invoved in the management of a hospitality enterprise

 Capacity and yield management
 Food pricing and menu engineering
 Service quality
 Service failure and recovery
 Evaluating service performance (outsourcing)
